RECIPE: low carb smoked salmon and spinach breakfast muffins 

I’ve been experimenting again in the kitchen and had another success story that I thought would be rude not to share with you guys! 

I’ve started riding my bike to work which makes me hungry for a decent brekkie when I get there.  I’ve been mixing it up quite a lot but wanted to delve in to the world of savoury muffins to expand my repertoire!  Have a go and let me know how you get on, I’m sure you could substitute the fillings for anything else you fancied! 


INGREDIENTS 

2 medium eggs

2tbsp grated cheese (I used cheddar)

2tbsp ground almonds 

200g wilted spinach

100g smoked salmon 

Salt and pepper to taste 

METHOD

Wilt the spinach in the microwave and then chop up with some scisssors

Chop the smoked salmon up in to small pieces 

Add all the ingredients to a bowl and mix together until all combined 

Divide mixture up in to 6 muffins in a muffin tin

Bake at 180 for 15 mins 

Remove from the muffin tins and let cool before refidgerating – they will last for about 3-4 days and are super easy to transport to work!
